More photographic evidence that spring is springing up all over my yard:

Another reason I know its spring is that Mary is getting the urge to cook some of the delicious Italian dishes that she found in a cookbook we bought last year. After watching Under the Tuscan Sun for the umpteenth time it occurred to us that for all our love of pasta we had a very limited repertoire of dishes that we prepared. This is a very delicious one with a very light sauce that tasted so incredible last night!

Recipe for Spaghetti with Tomatoes, Black Olives, Garlic and Feta Cheese from Food and Wine Magazine’s Quick From Scratch Pasta Cookbook:
Incredients:
(Serves 4)
1.5 pounds tomatoes, seeded and cut into 1/2 inch squares
1/2 cup Kalamata or other black olives, pitted
1/4 pound feta cheese, crumbled
3 tablespoons drained capers
3 tablespoons chopped flate-leaf parsely
1/4 teaspoon salt
1/4 teaspoon fresh-ground black pepper
3/4 pound spaghetti
6 tablespoons olive oil
3 cloves garlic, minced.
In a large glass or stainless-steel bowl combine tomatoes, olives, feta, capers, parsley, salt, and pepper.
In a large pot of boiling, salted water cook the spaghetti until just done, about 12 minutes, drain.
Meanwhile in a medium frying pan, heat the olive oil over moderately low heat. Add the garlic and cook, stirring, for 1 minute. Add the cooked pasta and the garlic oil to the tomato mixture and toss.
That’s it! Simple! The hardest thing is cutting up the tomatoes and getting the seeds out. (Which I did last night..I’m such a martyr!) 😉
It is a warm, light, delicious dish filled with so many interesting flavors. Thank you sweetie, it was yummy!
Hope your spring is going well so far. Its Tuesday folks, only 4 more days until the weekend!
This all looks lovely and delicious, thanks for the recipe!
is it really tuesday this time? can i wish you HAPPY TUESDAY on the correct day this week?
yay spring! and though it is getting warmer here, now is some of the coolest skiing all year – i am looking forward to at least two more weekends or so.
Beautiful pictures, Carl! I do love the sunshine we’re getting.
Mary, that dish is so delicious. Maybe you should bring it Saturday. 😉
Oo, pretty flowers.
the pictures of the flowers are gorgeous; but I couldn’t even LOOK at the food LOL! Been sick for 2 days, ugh.
Sorry Janet…that would be an unappetizing picture to look at if you are sick! 🙂 Hope you are one the mend!
I’m thrilled because I have leftovers for lunch today. That plus the wonderful bread from Panera (also pictured) will make for a delicious lunch!
I’ve never went snow skiing, Mysfit but it always seemed like it would be fun. I do love me some snow! Watching the Olympics really made me wish I knew how to snowboard because that looks like so much fun.
Beautiful pictures. Thanks for sharing.
Mary’s meals are always as delicious as that looks. Good thing I already ate lunch. (Mary might not appreciate my stealing leftovers from her lunchbox.)
I have made this Italian dish many times since Mary gave me the recipe. I always put more capers in because I love them!!! I don’t follow the recipe exactly all the time and it still comes out yummy!!
What are the dark pink flowers ,Carl? I indentified the other blossoms but not that one. I have been cleaning out under the trees and my flower gardens this week-I love being outside!!
I assume you mean the last picture? I’m not sure. Its a bush that was planted in the corner of the house before we moved in there. Don’t remember it having that many flowers in years past though. They are very pretty. I hate the fact that most of these flowers bloom and are then gone before the weather gets nice enough to be outside to enjoy them. Thankfully it has been nice this week, however.
Oh, so jealous with the blooms!! We have buds but nothing blooming yet.
The pasta looks wonderful! Full of things that taste like spring!
ya – is very fun, but so is eating delicious meals (with wine, of course)
Indeed, that meal would have been absolute perfection with wine. Although it tasted pretty close with an ice cold Pepsi.
Great pics!! I absolutely love that recipe!! Last time I had it was at your house for a girls night out. Now I’m hungry for it.
I’d have to take the wine over the Pepsi though.
Look forward to seeing you guys Sat.
Stunning pics of the flowers!
And thanks for the tasty recipe, too. I’m a big fan of kalamatas and capers, so this looks really good to me right now (ok, I’m also hungry at the moment..)
Those flowers are wonderful looking.
And that recipe sounds very tempting. i’ll have to give it a go.
